Autumn cuisine in the Pyrenees: mountain rice recipe

In autumn, rice dishes with seasonal ingredients, like mushrooms. From the Bringué Hotels (Andorra) we share the recipe of the most common mountain rice in the Pyrenees of Catalonia and Andorra, with meat and mushrooms.


Mountain rice recipe, ingredients for 4-6 people:

Light chicken or vegetable broth (optional), or water

4-5 tablespoons virgin olive oil

1 chopped rabbit

150 grams of pork rib

2 medium onions

1 red pepper

2 green peppers

2 or 3 cloves of garlic

2 or 3 medium, ripe and chopped tomatoes

100 grams of dried mushrooms

400 grams of pump rice



Preparation of the mountain rice recipe

1) 30 minutes before starting this recipe for mountain rice, put the dried mushrooms soak in 1 litre of warm water.

2) In a flat casserole (it can be mud) heat the oil and brown the meat previously seasoned with salt and pepper. Optionally add 2 or 3 whole garlic, which will then be removed. Remove the rabbit first and then the rib, which should be well done to get more flavour.

4) In the same oil, sauté the onion, peppers and garlic, all cut into pieces. When the onion is golden, add the tomato and salt, correcting the acidity (if necessary) with a teaspoon of sugar.

5) Add the rib and the rabbit, and stir until it sticks until it evaporates and at the bottom of the pan there is no water, only oil. It is important not to hurry; it is easy to end up cooking the sauce too little. Add the drained mushrooms by reserving the water.

6) Pour the rice and stir for 2-3 minutes to sauté.

7) Add the resulting liquid from the mushroom water along with the necessary amount of light chicken or vegetable broth, or water until it reaches one liter. We recommend not to pour all the liquid at the beginning; Reserve a little and add it as needed.

8) Cook for about 15 minutes, tasting and rectifying salt, and let stand about 5 minutes out of the fire. If you want a drier mountain rice, uncover the casserole and, if you want a rather warm mountain rice, cover it.
